If I was late with the pill in the previous pack, will I be normally protected with the next one?

If I've always protected myself twice (pills + condoms) and if during one of the pills I've been late with the pill and then later from the next pack of pills (I've already taken all of them correctly), is this protection still there? With every new pack comes new protection?

Yes, even if you were late or missed a tablet even in the previous pack, you are already fully protected when taking the tablets from the new pack.
