Lactic acid bacteria are most often active in the temperature range of 15°C to 45°C, and their activity decreases outside this range. Some studies indicate that high temperature can affect the activity of these bacteria, but there is no clear temperature at which they become completely ineffective. Therefore, in the case of specific products, it is recommended to follow the manufacturer's recommendations.
